Joe Williams made his first grade debut for South Sydney on May 29 2004 against Cronulla at Toyota Park, kicking three goals.

Joe played 46 first grade games with the South Sydney Rabbitohs from 2004-2007 before signing a one-year contract to play with the Penrith Panthers for the 2008 season after initially agreeing to a contract with French side, Toulouse Olympique.

Joe played just the one first grade game for Penrith in the opening round of the 2008 season against Brisbane before being dropped to NSW Cup.

On Wednesday May 14 2008, Joe was released from the Penrith club and joined the Bulldogs immediately before meeting most of his first grade team mates for the first time the following day when he joined them on their flight to the Gold Coast.

He completed his first training session with the team when they trained late Thursday afternoon at Skilled Park however did not play.

Just three days after switching to the Bulldogs, Joe was wearing the blue-and-white against the Windsor Wolves in the NSW Cup, the team he had played for only last week. The Bulldogs won their first game in five matches with Joe playing half back. He was awarded the Player's Play Award for best on ground.

On May 31, 2008, Joe made his first grade debut for the club against Melbourne after Daniel Holdsworth was ruled out through injury.

Joe became the 700th player to play first grade for the club.

Late 2008 brought a change of career for Joe as he jumped into the boxing ring.
