Gavin Lester joined Canterbury in 1997 as a winger.

Gavin became a regular member of the reserve grade team and played in the Premiership winning team against Auckland from the bench.

In 1998, Gavin started the season in reserve grade and received the opportunity to play in the NRL against Balmain when Craig Polla-Mounter was relegated. He became a regular member of the team and played in the Grand Final against Brisbane.

In 1999, Gavin started the season in the NRL but was relegated for Hazem El Masri mid-season and became a regular member of the 1st Division team. He played in the Semi-Final against Canberra.

In 2000, Gavin started the season in the 1st Division and returned to the NRL mid-season when Shane Marteene was injured. He returned to the 1st Division to play in the Premiership winning team against Penrith.

In 2001, Gavin injured his knee in a pre-season trial and missed the entire season. He returned in 2002, to start the season in the NRL but suffered a further knee injury. Gavin returned to play Premier League and played in the Premiership winning team against St George Illawarra.

In 2003, Gavin was a regular member of the Premier League team and played in the Preliminary Final against Penrith.

In 2004, Gavin joined the Roosters to play 10 NRL games that season. He played his last game in the Premiership winning Roosters team in the Premier League.
